Discouraged? Read This!

I am so PROUD of my sister!!!!

I told you about my sister coming to visit.  I told you she is type II diabetic and has lupus (an inflammatory disease - she has it in her joints).  She's also on insulin.

I also told you she knows NOTHING about eating low carb: NOTHING.  She thought eating oatmeal and eating whole wheat bread was eating low carb. (My sister has no computer, so she cannot scour the internet for information).

She came on Thursday, July 14th.  She saw my scale and wanted to weigh herself.  Her weight: 295.

That night we checked her blood glucose:  297 (she'd eaten a hamburger and fries earlier that day & in the evening, a no pasta, low carb "lasagna").  She said she couldn't understand why her sugar was so high when she'd "hardly eaten anything." I told her "Jess, it's not so much about HOW MUCH YOU EAT, but WHAT YOU EAT" when it comes to your sugar/insulin.

So....for the next 3 days she ate nothing but what we eat! All Low Carb!

In three days she lost 7 pounds!

I called her today, almost 2 weeks since she left us.

This is absolutely amazing..... She is down to 276!!! OMG!!! She's also lost 6 1/2 inches from the largest part of her abdomen (before she came - she was 57 inches at her largest part...yesterday, 2 weeks later - she is 51 1/2) !!! AND....when I asked her how she was doing with staying away from sugar, she answered, "I haven't had one slice of bread since I left Chicago!"  I am sooooooo proud of her!

Her blood sugar is measuring in the 150's!  Waaaaay different than 297!

A sample of her choices for breakfast (she pics either or, or sometimes the protein drink along w/something heavier):
bacon & eggs w/avocado
chorizo n' eggs
protein drink made w/strawberries & 1/2 a banana
*she's cut out all cereal, toast and oatmeal (her "before" foods)

For lunch: she chooses a meat filled low carb wrap of some kind.

Dinner: she has a George Foreman grilled steak or chicken along with veggies in butter or a salad.

Dessert: strawberries with a cream cheese topping.

Did I say how proud I am!!!!

GO-GO JESS!!!!

Just want to encourage you: Low Carb - Low Sugar WORKS!!!!

In case you're wondering, I use this bread:

My BG before eating the sandwich along w/carrots n' ranch dressing: 96
My BG 2 hours after eating: 95

Go-go Lucy and go-go Lucy's sister too!!! Sounds like she is taking all the knowledge you have given her and running with it! You're both doing awesome!

I can hear the pride in your voice. I wish that my sister would give low carb a try for her Diabetes. I also love that bread but I have to keep it in the fridge because of the humidity here. Do you have that problem?

This made me almost CRY with hope!!! GIRL. I am so doing this. I can do this. I had 93 net carbs today. BETTER THAN I'VE EVER DONE. And I did not have 1 slice of bread! But i know i can do better than that!

Melissa put a link of this post on her blog and I found it and I must say the chinese chicken & cabbage looks so yummy! Is that a recipe you make or something you buy? I'd love to make some!

Ashley, thank you for the compliment. Actually my daughter made this and she RARELY writes anything down! I always ask her to write it down or take pictures along the way but, she's a teenager!LOL!

I know she cooked the chicken separate from the cabbage. I asked her about the cabbage and she said, for cook the cabbage, she used coconut oil (to saute), garlic, chinese rice wine, oyster sauce, and soy sauce (she used the same amount of soy sauce and rice wine...she started out with 1/2 a T of each). About 1/4 of that amount is what she used of the oyster sauce (oyster sauce is pretty strong). She said you MUST use green onions (she used a whole "bunch" of them - this is, of course, if you like green onions). That's all she can remember. Adapt to your taste. Oh, you might need to add a couple T's of chicken broth if it's not moist enough.

I'll try n' have her write it down nxt time. She'll also use the same combination and add broccoli and yellow squash...very good
